Tuyo

 

    Tuyo is a well-loved dried fish in the Philippines, usually made from herring. It's kept for a long time by salting and drying it in the sun, which gives it a salty and tasty flavor. Many Filipino families enjoy it as a regular part of their meals, especially for breakfast with rice and tomatoes. You can also use tuyo in different recipes, like pasta, salads, and stir-fries.

Ingredients:
1. 2 kg Fresh herring fish
2. 1/2 Cup sea salt

Procedure:
1. Rinse in cool running water. Transfer in a colander to drain excess water.
2. Place in a stainless tray and add the sea salt.
3. Gently mix with hands until salt is well distributed. Cover with cling film wrap.
4. Keep inside the fridge for 2 days.
5. Place it on a cooling rack and let it dry under the heat of the sun for 1 whole day. Or in our case onboard, I place it inside the oven with the temperature set to 50’C and the oven door crack open for the air to circulate. Let it dry for 12 hours.
6.Wrap dried herrings in clean newspapers. I portion it into 200 grams each packet.
7. Pre-heat cooking oil in a pan. Shallow-fry for a minute on each side. 8. Enjoy it with warm steamed rice or garlic fried rice and garlic vinegar dip.

Rating:
⭐⭐⭐⭐⭐- Since it has a delightful dryness, and when dipped in vinegar, the combination of saltiness and sourness enhances the flavor even further. It also pairs well with soft drinks.
